Crock Pot Ravioli Casserole

 I have to say that I am truly indebted to Pinterest!  I have gotten so many fabulous recipes, like THIS one, from there!  My family completely devoured this meal and asked for seconds.  It is just one of those recipes that you will make over and over...and I don't do that.  I usually make it once and try something else.  I get bored of making things frequently...I'm weird like that;) 

This says that it is a crock pot recipe...I have tried it both ways...with a crock pot and with out...and they taste the same either way.  So if you are running out of time...just nix the crock pot.  In fact, I will probably never use the crock pot...since I feel like there's just a lot of dirty dishes while using it!  Serve it with a salad and some hot, buttery French bread and you are in business!  

Crock Pot Ravioli Casserole

1 lb. lean ground beef
1 onion, chopped
1 clove garlic, minced
1 (15 oz.) can tomato sauce
1 can petite diced tomatoes
1 tsp. oregano
1 tsp. Italian seasoning
1-2 handfuls of fresh spinach (depending on families taste..take off stems)
16 oz. bow-tie pasta, cooked
1/2 c. Parmesan cheese, shredded
1 1/2 c. mozzarella cheese, shredded

Crock Pot Directions:
Brown ground beef with onion and garlic.  Put in crock pot and add sauce, tomatoes and seasonings.  Cook for 6-7 hours on low.  Add spinach, pasta, Parmesan and 1 c. mozzarella during the last 30 minutes of cooking...stir really well, turn crock pot to high.  Then add the last 1/2 cup of mozzarella to melt on the top.

Stove Top Directions:
Brown ground beef with onion and garlic.  Add sauce, tomatoes and seasonings, let simmer for about 15-20 minutes.  Add spinach, pasta, Parmesan and 1 cup mozzarella, stir really well.  When its all mixed together, plate it up and sprinkle with remaining mozzarella.  Enjoy!
