I got this recipe from my friend, Robyn...and wow...it is GOOD! The best part is, is that you probably have most, if not all, of the ingredients in your pantry now:) How great is that! We served this on tortillas the first night and as nachos the next...I loved them as nachos.
Another fabulous thing...its a Crock pot meal!
Southwestern Chicken
2 cans corn, drained
1 can black beans, rinsed and drained
1 jar salsa
3-4 frozen chicken breasts
1 can enchilada sauce
Put everything in the crockpot and cook on LOW for 8 hours. Top it with cheese, sour cream, avocados, etc.. and serve with tortillas. Or make Nachos!
Ok, I need to know what size of enchilada sauce!
