White Chocolate Chip Lemon Cookies

Can I just say how much I LOVE these cookies?  They are little bits of heaven:)  They are the perfect Spring cookie.  I believe I came across this cookie at my friend Brandy's Christmas Cookie Exchange about 3 years ago.  I love them and do not make them as often as I should!!


White Chocolate Chip Lemon Cookies

1/2 c. softened butter
1 c. sugar
1 egg
1 TBS milk
1 tsp. lemon juice
1/2 tsp. vanilla 
1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
1 c. white chocolate chips
1 1/2 tsp. grated lemon zest
1/4 c. chopped pecans

Preheat oven to 350 degrees.  Cream butter and sugar with electric mixer until light and fluffy.  Add egg, milk, lemon juice and vanilla, mix well.  Combine flour, baking powder and salt.  Add to butter mixture; mix well.  Stir in white chocolate chips, lemon zest and pecans.  Drop by tablespoonfuls onto ungreased cookie sheet.  Bake 12-15 minutes or until edges are a light golden brown.  Cool 3 minutes on sheet; remove and cool completely on cooling rack.

  1. Those look good. Yesterday I made some like this but with orange. I couldn't stop eating them!
